The History of Hummus
Hummus, a word derived from the Arabic term for “chickpeas,” can trace its roots all the way back to early civilization—ancient Egypt and the Levant region. The main ingredients of hummus, including chickpeas, tahini, olive oil, and lemon, are an insight into what some of the local ingredients were. Over the centuries, hummus has spread its wings across the Mediterranean, becoming a beloved dip, spread, and even a main course.
Green Goddess Dressing: A San Francisco Sensation
In a time when food culture was evolving at a rapid pace, a vibrant dressing emerged on the culinary stage—the Green Goddess dressing. The birth of this luscious sauce can be traced back to the 1920s at the renowned Palace Hotel in San Francisco. Created as a tribute to a play titled “The Green Goddess,” this dressing showcases the fresh flavors of herbs such as tarragon and chives, along with the creaminess of mayonnaise and sour cream. Its popularity quickly soared, becoming a staple in salads and an inspiration for many other culinary fusions such as this hummus.
Harmonious Fusion: Creamy Green Goddess Hummus
The magic of my Creamy Green Goddess Hummus lies in the blending of two culinary giants. It has the core ingredients of a traditional Middle Eastern hummus, steeped in a rich history and the vibrance of Green Goddess dressing from the bustling 1920’s, creating a whole new way to dress up a dinner party, a casual BBQ, or a simple lunch.

What You’ll Need:
Chickpeas- Canned or fresh work beautifully in this healthy dip.
Spinach- A little bit of fresh spinach adds nutrients and a lively green color.
Parsley- Fresh parsley is a must. Grab a bunch of Italian parsley, it has great mild flavor.
Tarragon- (optional) Keeping in theme with the original & classic Green Goddess Dressing, you can add up to 1/4 cup fresh tarragon along with the parsley. I’ve made it both ways and both are fantastic.
Green Onions- You will only need about 3 green onions but you can use the rest for a garnish.
Lemon Juice- Lemon juice is an important it brightens the overall taste, and balances the earthiness of chickpeas and tahini. The citric acid in lemon juice also acts as a natural preservative, extending the life of hummus while keeping it bright green.
Garlic- Garlic is a fundamental ingredient adding an aromatic depth to the dip. Its slightly spicy notes not only complement basic hummus ingredients, but the fresh green goddess components creating a harmonious blend of flavors.
Tahini- Tahini is a creamy paste made from ground toasted sesame seeds. With its rich, nutty flavor and smooth texture, tahini is a staple ingredient in Middle Eastern and Mediterranean cuisines. It adds depth to the fresh flavors.

Olive Oil- Olive oil plays a crucial role in hummus, both in terms of flavor and texture. Its fruity and rich taste adds a luxurious dimension to the dip. Additionally, olive oil contributes to the smoothness and creaminess, creating a velvety texture by emulsifying the ingredients. Lastly, olive oil forms a protective layer on the surface of hummus, helping to preserve its freshness.
Cumin- Cumin is an essential spice, with its warm taste and distinct smoky aroma.
Blender– I have only ever made hummus in my high-powered blender, and the Vitamix works best in my opinion. It is my favorite way to mix this together because I haven’t ever had to worry about “peeling” the chickpeas. Since it is quite thick, I recommend having the tamper ready and using it to help the motor effectively move the blades.
Note: If you have food processor big enough, you can certainly give it a try too.
Green Goddess Chicken Pasta
Hummus is SO much more than a dip for your chips. It can also make dinner time easier. Leftovers of this recipe makes fantastic pasta dish. Elevate your next pasta night with this Green Goddess Chicken Pasta. Grilled chicken meets al dente pasta and fresh & creamy green sauce.
Start by cooking 16 ounces of your favorite pasta. Spaghetti, Linguini, Rotini, Rigatoni…. anything you like. Drain and reserve 1 cup of pasta water. Toss in 1-1/2 cups of hummus, a squeeze of lemon, the reserved pasta water, and salt & pepper to taste. Mix it up, plate and top off with grilled chicken. Voila! A high protein, healthy pasta dinner.

Green Goddess Open-Faced Sandwich
It also packs a punch spread on a open-faced sandwich. Layers of hummus, tomato, and everything but the bagel seasoning sitting on toasted bread.
Grab a slice of your favorite toasted bread. Spread on a healthy layer of hummus and top it off with anything you like. Try avocado, tomato, bacon, or even arugula. Season it with salt & pepper or everything but the bagel seasoning. If you don’t want to add any more salt, then just use pepper or plain sesame seeds.
Green Goddess Hummus Salad Dressing
Add 1/2 cup leftover hummus, the juice of 1/2 a lemon, 1 tablespoon Dijon mustard, and 2-4 tablespoons water (as needed) to a small mixing bowl. Combine well, adjusting water as needed. Salt & pepper to taste.
Drizzle over your favorite greens and salad veggies.
Refrigerate for up to a week
NOTE: Perfect for hummus that you have had to freeze. Hummus that has been frozen and defrosted doesn’t always make the best dip but makes perfect salad dressings and pasta sauces!

Creamy Green Goddess Hummus
Equipment
- 1 High-Powered Blender, with tamper
Ingredients
- 3 -16 oz. cans of chickpeas, aquafaba reserved
- 1/2 cup aquafaba, add more if needed
- 1/2 cup tahini
- 1/3 cup olive oil
- 3 cloves garlic, or more to taste.
- 1 teaspoon salt
- 2 ounces fresh spinach, (approximately a few handfuls)
- 3 green onions, roughly chopped
- 1 bunch Italian parsley, roughly chopped
- 1/4 cup fresh tarragon, optional
- 2 lemons, juiced
- 1 teaspoon cumin powder
Optional Garnishes:
- parsley, chopped
- green onions, sliced
- chili flakes
- pepper
- olive oil
- sesame seeds
Instructions
- Toss the drained chickpeas, reserved aquafaba, and remaining ingredients into your high-powered blender using the tamper to help the ingredients move smoothly.
- Start blending on low, adding more aquafaba if needed to get the consistency you prefer.
- Place in an air-tight container and refrigerate for up to 7 days.
- Use as a dip with tortilla chips & veggies, a spread for sandwiches, or as a pasta sauce. See notes below.
