There is something reassuring about having the kind of breakfast that you bake once and eat throughout the week. I am all about trying to multi-task, meal prep, and plan ahead when I can all while avoiding as much pre-packaged foods as possible. Starting the day with a warm breakfast like this Blueberry Banana Oatmeal Bake never fails to be a hit. This laid-back casserole version of a traditional bowl of oatmeal has been pretty popular lately.

I often make oats in different ways because my daughter loves them and I am always on the hunt for new ways to be creative in the kitchen. I don’t usually opt for a box of cereal so I need a kid-friendly breakfast that I can count on. Though it is much easier to pick one up off the shelf at the grocery store and the choices are never-ending, I am willing to put in the extra effort for the nutritional benefits of homemade with whole ingredients.

This breakfast is the whole package. I checks a lot of boxes and solves a few problems. It’s a healthy, batch recipe that is also fairly inexpensive. That is a win, win whether you are a mom to a small family like me, one person, or even a large household. You can easily double the recipe if needed or freeze leftovers for another time.

Why is this Oatmeal Bake healthy?

Oats are a nutritional powerhouse due to their high fiber content, which supports digestion and helps regulate cholesterol levels. Additionally, oats provide a sustained release of energy, making them an great choice for maintaining stable blood sugar levels and you full for longer. Blueberries are rich in antioxidants, supporting brain function. Let’s not forget about bananas. They are packed with heart healthy potassium. Even the eggs bring some protein to the table.

It isn’t just the “core” ingredients that are the star of the show. Maple syrup isn’t just a decadent natural sweetener; it also has some health benefits. Made from the sap of maple trees, it is rich in antioxidants, a lower glycemic index compared to refined sugars, meaning it causes a slower and steadier rise in blood sugar levels.

Furthermore, it contains essential minerals like manganese, which supports bone health and helps in energy metabolism. When using maple syrup as your sweetener, you’re not only enhancing flavors but also adding a touch of natural nutritional goodness. Don’t let these “basic” go-to ingredients fly under the radar, this is a delicious, nutrient packed way to start your day!


What You’ll Need:

Oatmeal- Any old-fashioned rolled oats. Gluten-free if you need it.

Fresh Blueberries- You will need about 2 cups total. I don’t use frozen blueberries with my bakes because they hold a higher water content and can make it a little mushy.

Ripe Bananas- The riper the bananas the better. Ripe bananas are easier to mash and add to the overall sweetness. Whether they are “freckled” or completely brown, both work as long as they are far from the fresh, firm yellow bananas.

Maple Syrup

Milk- You can use regular whole milk, 2 %, or even a non-dairy alternative. I use whatever I have on hand and it always works. Keep in mind that some non-dairy milks can impart a little different flavor, but the texture will still be great.

Cinnamon- I typically use cinnamon, but you can swap it out with Pumpkin Pie Spice or even Apple Pie Spice.

Baking Powder Gluten-free if you need it.

Equipment

  • 1 9 x 9" Square Baking Pan

Ingredients
 
 

  • 3 cups old-fashioned rolled oats
  • 2 pinches of salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups fresh blueberries
  • 2 ripe bananas
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups milk

Topping:

  • 1/2 cup fresh blueberries

Instructions
 

  • Prepare your 9 x 9" pan with non-stick spray and pre-heat the oven to 350F or Gas Mark 4.
  • In a medium mixing bowl, mash the bananas very well with a fork and combine with eggs, milk, maple syrup and vanilla. Make sure the eggs are also well beaten. Set aside.
    Note: You can also mix the wet ingredients in the blender for a few pulses just to make sure the eggs and bananas are fully incorporated.
  • In another medium mixing bowl combine the oats, baking soda, salt, and cinnamon.
  • Add the dry to the wet ingredients and mix well. Gently fold in 1 1/2 cups blueberries and pour the mixture into your prepared baking pan and spread out evenly. It will be very liquidy, the oats will soak it up as it bakes.
  • Top off with the remaining 1/2 cup blueberries and bake on the middle rack for 40-45 minutes. It should be set in the middle and lightly browned.
  • Let rest and cool for 10 minutes then cut into 9 squares. Store in an air-tight container in the refrigerator for up to 7 days.
