This vibrant and flavorful dip, born from the fusion of Middle Eastern hummus and the West Coast's Green Goddess dressing is also perfect to keep in your fridge all week long for sandwiches, snacks, salad dressings, pastas, and more!

Equipment

  • 1 High-Powered Blender, with tamper

Ingredients
  

  • 3 -16 oz. cans of chickpeas, aquafaba reserved
  • 1/2 cup aquafaba, add more if needed
  • 1/2 cup tahini
  • 1/3 cup olive oil
  • 3 cloves garlic, or more to taste.
  • 1 teaspoon salt
  • 2 ounces fresh spinach, (approximately a few handfuls)
  • 3 green onions, roughly chopped
  • 1 bunch Italian parsley, roughly chopped
  • 1/4 cup fresh tarragon, optional
  • 2 lemons, juiced
  • 1 teaspoon cumin powder

Optional Garnishes:

  • parsley, chopped
  • green onions, sliced
  • chili flakes
  • pepper
  • olive oil
  • sesame seeds

Instructions
 

  • Toss the drained chickpeas, reserved aquafaba, and remaining ingredients into your high-powered blender using the tamper to help the ingredients move smoothly.
  • Start blending on low, adding more aquafaba if needed to get the consistency you prefer.
  • Place in an air-tight container and refrigerate for up to 7 days.
  • Use as a dip with tortilla chips & veggies, a spread for sandwiches, or as a pasta sauce. See notes below.

Green Goddess Chicken Pasta:

  • Start by cooking 16 ounces of your favorite pasta. Spaghetti, Linguini, Rotini, Rigatoni.... anything you like. Drain and reserve 1 cup of pasta water.

  • Toss in 1-1/2 cups of hummus, a squeeze of lemon, the reserved pasta water, and salt & pepper to taste. Mix it up, plate and top off with grilled chicken.

Green Goddess Open-Faced Sandwich:

  • Grab a slice of your favorite toasted bread.

  • Spread on a healthy layer of hummus and top it off with anything you like. Try avocado, tomato, bacon, or even arugula.
  • Season it with salt & pepper or everything but the bagel seasoning. If you don't want to add any more salt, then just use pepper or plain sesame seeds.

Green Goddess Hummus Salad Dressing:

  • Add 1/2 cup leftover hummus, the juice of 1/2 a lemon, 1 tablespoon Dijon mustard, and 2-4 tablespoons water (as needed) to a small mixing bowl. Combine well, adjusting water as needed. Salt & pepper to taste.
  • Drizzle over your favorite greens and salad veggies.
  • Refrigerate for up to a week
