1/4cupextra virgin olive oil, or neutral oil of choice
1/4cupDijon mustard
1/4 cupreal maple syrup, or to taste
1/4cupapple cider vinegar
sea salt & pepper to taste

Instructions
In blender or small mixing bowl, pulse/whisk all of the ingredients to combine.
Add salt & pepper to taste.
Transfer the mixture to an air-tight container and store in the refrigerator for up to one week.
This can be reduced by half or doubled if needed.
Use as a salad dressing or marinade for chicken & pork. You can also reduce the apple cider vinegar use as a dip if you like.
