The BEST Peach Cobbler Granola

Equipment

  • Parchment Paper

Ingredients
  

  • 6 cups old-fashioned oats
  • 6-8 ounces dried peaches, chopped
  • 2/3 cup unsalted walnuts or pecans, chopped (see notes below)

Crumb:

  • 1/3 cup butter, melted & cooled
  • 1/2 cup all-purpose flour
  • 2/3 cup white sugar

Sauce:

  • 3/4 cup butter
  • 1/2 cup peach preserves
  • 1/4 cup brown sugar (see notes below)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

  • Mix all of the crumb ingredients in a small mixing bowl and set aside.
  • Pre-heat the oven to 300 F, measure the oats & nuts into a large mixing bowl, and prepare the baking sheet with parchment paper. Set them aside.
  • Add all of the sauce ingredients to a medium sauce pan and turn the heat to medium low. Stir often as it melts together to prevent burning, about 5 minutes.
  • Pour the sauce over the oats & nuts and mix well. Pour the oats into the baking sheet and spread out evenly. With your hands, add the crumb topping on top of the oats. Bake on the middle rack for 15 minutes.
  • While the granola is baking, chop the peaches into bite sized peaches. After the 15 minutes is over, remove the baking sheet and sprinkle the peaches on top of everything else.
  • Carefully "turn" with a spoon to gently "mix" (without breaking the crumb) the ingredients together. Bake an additional 5-10 minutes.
  • Remove from the oven and make sure it cools completely before serving or storing away. Enjoy!

Notes

Nutritional values and servings are estimates only.
*Brown sugar can be omitted to reduce the sugar. Taste the sauce before removing from the stove, if it is still not sweet enough, you can still add it in and heat on medium until melted. 
*Any unsalted nuts can be used. They can also be omitted or swapped unsweetened coconut, just make sure it is added with the peaches so they don't burn.
