Instant Pot Honey Ginger Drumsticks

I must confess… I love my kitchen gadgets and the Instant Pot has made my job in the kitchen SO much easier. It has allowed me to meal prep and cook in bulk at the push of a button. This recipe for Honey Ginger Drumsticks is something I threw together a few years ago and has been on a regular rotation ever since.

I’m always looking to incorporate fresh ginger into a recipe and this one fits the bill. It’s as simple as mixing up the sauce & adding it all to the Instant Pot with the chicken. It’s fall off the bone tender and full of flavor. Serve this with steamed Jasmine Rice and a steamed vegetable such as Broccoli and you have a balanced meal that everyone will love.

What You’ll Need:

Chicken Drumsticks- I don’t see too many good recipes using drumsticks. It could just be me, but I’ve always had a hard time finding or creating a recipe that turned this “budget friendly” cut of meat into something special. There’s nothing wrong with a simple meal but I always try to elevate the basics just a little bit so that when we are primarily eating our meals at home I feel like I am feeding my family something special at the same time.

Soy Sauce or Coconut Aminos- Either one works great. If you are on any type of diet that has eliminated soy then you can easily swap out the soy sauce for coconut aminos.

Honey- I like to use honey as the sweetener to balance out the saltiness of the soy sauce/coconut aminos and enhance the ginger not just because of the better flavor, but also because it adds to the necessary liquid that the pressure cooker needs to work.

Brown Sugar- Adding a touch of brown sugar amplifies the honey. The extra sweetness really brings all of the flavors together, definitely don’t skip this ingredient.

Ginger- This recipe calls for fresh ginger and HIGHLY RECOMMEND not substituting it with powdered. It’s easy to find it at your local grocery store in the produce section. I usually keep a good size piece of ginger root in my refrigerator, it’s easy to peel, chop, and toss into recipes for a punch of ginger flavor and really makes the flavors pop.

Korean Chili Flakes I use these mild chili flakes in SO many recipes and I love using them in this recipe as a colorful garnish. Unlike the more traditional chili flakes that are extremely spicy, Korean chili flakes are not hot but they do add that peppery flavor. I get mine in bulk on Amazon and store them in a large air-tight glass jar.

Pressure Cooker You will need a 6 quart electric pressure cooker. I absolutely love my Instant Pot. Though the brand isn’t necessary, it is the one I recommend because it allows me to pressure cook & slow cook. Whether it is for one meal or bulk prep, it is my most used kitchen gadget.

If you do not have a pressure cooker, this recipe can be made in a crockpot on high for 4-6 hours. Keep in mind that the results will vary if you are using a slow cooker.

Equipment

  • 1 6 quart pressure cooker

Ingredients
 
 

  • 8 Chicken Drumsticks
  • 1/4 cup Water
  • 1/2 cup Soy Sauce, or Coconut Aminos
  • 1/4 cup Honey
  • 2 tablespoons Dark Brown Sugar
  • 2 tablespoons Rice Wine Vinegar
  • 2 Garlic Cloves, minced
  • 1 tablespoon Fresh Ginger, minced
  • 1/4 teaspoon Onion Powder
  • 1 teaspoon Korean Chili Flakes, optional garnish
  • 2 Green Onions, sliced, optional garnish

Instructions
 

  • In a small bowl combine water, soy sauce, vinegar, garlic, ginger, onion powder. Whisk in the honey and set aside.
  • Place the drumsticks into the pot of your pressure cooker and pour the sauce over the top.
  • Make sure the silicone ring is inserted into your lid and seal your cooker. Set to pressure cook for 10 minutes on high and slow release for 10 minutes.
  • Serve the chicken over rice and your favorite veggie side dish. Garnish with sliced onion and a sprinkle of the korean chili flakes. Enjoy!
